Colors are very symbolic and significant throughout Korean culture, design, traditions, and cooking. So much so that the concept has a name: 오방색 (obangsek, “5 directions of color”). Having all 5 colors (blue/green, red, white, black, yellow) in one dish is said to ensure a healthy and balanced life.
Kimbap is a traditional dish that follows this obangsek food philosophy. It tastes as good as it looks too! Kimbap is a staple in Korean culture, seen at formal banquets and in on-the-go kiosks alike: Lovingly packed into a 도시락 (doshilak) lunchbox for a school field trip, plated in glistening pyramidal mounds for a baby’s 돌 (dol) 1st birthday party, rolled in tin foil and sold out of a cooler in Seoul’s subway station, enjoyed halfway down the Delaware River on a tubing trip with friends.
